INGREDIENTS

  • 150g egg whites
  • 65g sugar A
  • 100g egg yolk
  • 35g sugar B
  • 2g salt
  • 60g cream powder
  • 13g almond flour
  • 35g black sesame paste
  • 30g Pilot butter
  • 20g milk
  • 2g vanilla extract
  • 1/2 vanilla bean
  • 1.4g baking powder
  • 280g ground black sesame seeds
  • 150g sesame oil + vanilla syrup
  • 1.5g salt
  • 80g fresh cream
  • 300g mascarpone
  • 750g whipping cream
  • 60g sugar
  • 100g black sesame sauce
  • 2.2g salt
  • 100g sugar
  • 150g water
  • 5g vanilla

HOW TO MAKE BÁNH BÔNG LAN CUỘN MÈ ĐEN

  1. Whip egg whites with sugar A until stiff.
  2. Mix egg yolks with sugar B and salt.
  3. Boil cream powder, almond powder, and baking powder.
  4. Mix black sesame paste, Pilot butter, milk, vanilla extract, and fruit purée together.

Put all ingredients into a blender and blend until smooth.

  1. Combine mascarpone, whipping cream, and sugar, then mix well.
  2. Melt white chocolate and mix it into the mixture from step 1.
  3. Add the black sesame sauce and mix until combined.
